Apostoles Palo Cortado by Gonzalez Byass is an aromatic, soft sherry made from Palomino Fino (87%) and Pedro Ximenez (13%) grape varieties.
This sherry shines in the glass in a warm amber tone and exudes an elegant bouquet with the fine and concentrated aromas of nuts and dried fruits - especially dates and figs. Pedro Ximénez gives this sherry hints of raisins and liquorice. On the palate, the Byass Apostoles presents itself soft, intense and complex. The fine notes of caramel and precious wood are reminiscent of the long barrel maturity, the elegant nuances of raisins on the Pedro Ximénez. This sherry delights with its perfect balance of acidity and sweetness, as well as the long reverberation.
Vinification for the Byass Apostoles Palo Cortado
After careful harvesting by hand of the two grape varieties, the harvested goods are immediately taken to the wine cellar of Gonzalez Byass. There the grape varieties are vinified separately from each other. The Palomino Fino berries are first gently pressed. At low temperatures, this sherry is fermented dry in a stainless steel tank and then sprayed on to 18% by volume and placed in the Palo-Cortado-Soleras.
The Pedro Ximenez grapes are first traditionally dried in the sun for about 2 weeks. This is followed by fermentation in a stainless steel tank and spraying to 15% by volume. This wine is then placed in the Pedro-Ximenez-Soleras.
The two wines mature separately for more than 12 years, are then married and now mature together for 18 years in the Apostoles-Soleras. Due to the 30-year maturity, this high-quality sherry is allowed to carry the rare quality seal (Vinum Optimum Rare Signatum).
