The starting point for the first-class and wonderfully powerful cuvée Bin 2 Shiraz Mataro from Penfolds are Monastrell and Shiraz grapes. After the grape harvest, the grapes reach the winery by the fastest route. Here they are sorted and gently broken up. This is followed by fermentation in small wood at controlled temperatures. At the end of fermentation, the Bin 2 Shiraz Mataro is aged for 8 months in French and American oak barrels.
