The Bin 2 from Penfolds is a concentrated, full-bodied red wine cuvée from the grape varieties Mataro and Shiraz. The grapes for this red wine grow in the Australian wine-growing region of South Australia.
In the glass this wine reveals a deep dark, strong black-red colour with a deep purple core. This cuvée has a warm, aromatic, robust bouquet with hints of figs, dates, plums (prunes), quince paste and cake spices. Notes of pickled blueberries, blackberries and leather underline the aromas of the nose.
On the palate this Australian red wine is full and velvety with a medium to full body and a taste reminiscent of rich berries and warm chocolate aromas. The subtle notes of oak wood and the elegantly integrated, fine-grained, almost powdery tannin add to this in the background. A fresh acidity and a long, plump finale with a spicy finish of dark berries complete this wine.
Vinification of the Penfolds Shiraz Mataro Bin 2
The Shiraz and Mataro grapes are separated by origin, harvested, selected and vinified separately. The must is fermented in stainless steel tanks in the Penfolds cellar and after the fermentation process is completed, the wine matures for 8 months in French oak barriques (10% new wood) and in American oak Hogsheads. After maturing in wood, this wine is blended for the final blend and left to rest on the bottle in the cellars for some time before it leaves the Penfolds estate.

We recommend this dry red wine from Australia with gently stewed meat and poultry with tomatoes such as Osso buco, Coniglio alla cacciatora (rabbit in hunter's style), veal roulade in tomato sauce or Poulet basquais (Basque chicken), Provencal beef ragout (in red wine sauce), fried rabbit with prunes, gratinated eggplants or ratatouille.
