First traditional bottle fermentation in Mâcon
in 1920, the Chevalier house was founded by Eugène Chevalier in Charnay-lès-Mâcon, near Mâcon. From the beginning, Eugène knew that he had to face a great challenge. The Méthode Traditionelle was already very successful in Burgundy, in Nuits-Saint-Georges and Rully - only it was not yet bubbling in the Mâcon region. And that is exactly what Eugène Chevalier made his task.
Mastering tasks
Eugène threw himself heart and soul into this task with his house Chevalier. And he succeeded - even perfectly. He was thus the first in Mâcon to introduce traditional bottle fermentation.
Self-confidence is everything
The Maison Chevalier was conscious of the quality of its sparkling wines and about expertise, so Eugène was not afraid to challenge Champagne with confidence.
Chevalier was also proud to vinify sparkling wines using the Méthode Traditionelle, whose extended vat aging perfectly expresses the quality of the base wines, the richness of their maturity and the brightness of their aromas.
