The grapes for the grape variety Cordillera Carignan from Miguel Torres Chile grow in the Valle de Maule in the beautiful Chilean wine-growing region Valle Central.
In the glass, this wine shines an intense ruby red with dark red highlights. The aromatic bouquet is dominated by ripe, dark berries. The lush berry fruit is enveloped by fine notes of herbs, spice and smoke. Roasted oak notes and a hint of vanilla are subtly added. The aromatic fruit is also wonderfully present on the palate and merges with the full-bodied body to a wonderful harmony. The firm, yet gentle tannins and the fresh acidity are very well integrated into the body. The round, harmonious finish convinces with a pleasant length and a slightly spicy aftertaste of mint and bay leaf.
Vinification of Torres Cordillera Carignan
In the months of March and April, the grapes for this red wine are harvested. Once in the wine cellar, the grapes are carefully selected, completely destemmed and mashed. The mash is then fermented for 10 days at a controlled temperature of 25 degrees Celsius in a stainless steel tank. This wine remains on the mash for 25 days, so that the aromas, colour and tannins can be concentrated from the berry peels. After gently removing this wine, it matures for a total of 12 months in French oak barrels. Of these, 30% are new wood and 70% are barrels from first occupation.
