Vinification of the Chablis Premier Cru
The Domaine William Fèvre is considered to be the best of all Chablis vineyards. William Fèvre's oenologist-in-chief William Fèvre has made it his task to let the wine "speak" through his terroir. The wines impress with their typical terroir and varietal minerality and finesse.
The Chardonnay grapes for this Chablis Premier Cru are cultivated in the Domaine's Premier Cru-Lage Fourchaume and are harvested by hand in order to produce only the best grapes. After selective harvesting, the grapes are gently pressed, fermented and aged at a controlled temperature. The wine matures for 13 to 14 months, 40 to 50% of the vintage in used wooden barrels made of French oak, the rest of the must in stainless steel tanks. 5 to 6 months the wine remains in the wooden barrels on the fine yeast (sur lie). The wine is aged in small stainless steel tanks for the finished wine.
