The fact that the Pinot noir precoce grapes thrive under the influence of a rather cool climate has an influence on the ripening of the grapes that cannot be denied. This is expressed among other things in particularly long and even grapes and rather moderate alcohol content in the wine. The berries for this red wine from Germany are harvested exclusively by hand after the optimal ripeness has been ensured. After the hand harvest, the grapes quickly reach the press house. Here they are sorted and carefully ground. Then fermentation takes place in small wood at controlled temperatures. The fermentation is followed by maturation for several months in oak barrels.
