The La Monaca Monreale DOC from Tenuta Sallier de la Tour is a complex and powerful red wine that conveys the varietal aromas of Syrah grapes famos.
The glass shows the La Monaca Monreale DOC in a strong ruby red. On the nose, it reveals the typical aromas of the Syrah grape with penetrating spice and aromatic herbal notes. Deep notes of dark berries, plum compote and cedar wood reach the nose. These aromas can also be tasted on the palate. Here the balsamic texture of this varietal Syrah unfolds. A juicy acidity tares the intense fruit. Fine tannins flatter the tongue and the reverberation is long and lasting.
Vinification of La Monaca Monreale DOC by Sallier de la Tour
Standing in a trellis and growing on clay soil, Syrah develops on the south-west facing vineyards 350 metres above sea level in THE DOC Monreale, in particular in the Jato valley, where Syrah vines have found an almost ideal location. The yield is low, the quality and concentration of the grapes high.
The Syrah grapes are selectively harvested by hand and fermented at 25-30°C in the steel tank in contact with the shells. Malolactic fermentation is complete. Afterwards, the wine matures for 14 months in French oak from Alliers and Troncais and then remains in the bottle for another 6 months.
This wine is made 100% from Syrah grapes, a grape variety whose exact origins are still unknown, spread all over the world, which has developed into a real terroir wine in Sicily. It is of great interest to the winery, as it has developed considerable potential in Sicily and has thus become an expression of a Sicilian terroir variant.
Food recommendation for La Monaca by Sallier de la Tour
