Vinification for the Mandrarossa Rupenera Merlot The vineyards of the Cantine Settesoli are located in Menfi, on the Sicilian south coast. Thanks to the special conditions of sunlight, temperatures and sea breezes, the region is perfectly suited for viticulture.  The vines of this merlot grow on predominantly calcareous soils. After an 8-10-day mash fermentation at 22-25°C, the wine matures for 3 months at a controlled temperature in stainless steel tanks and another 3 months on the bottle.
