Merlot Südtirol DOC - J. Hofstätter

The Merlot Alto Adige DOC from Tenuta J. Hofstätter has an intense ruby red color in the glass, the bouquet is warm, concentrated and dense, with aromatic varietal notes of blackberry jelly and hints of undergrowth and humus. Powerful and complex on the palate, this South Tyrolean Merlot unfolds its distinctly vinous aromas, with well-integrated, firm tannins and soft fruit. The finish is long and persistent.

Vinification of the Merlot Alto Adige DOC from J.Hofstätter

The vineyards on which the vines for this Merlot are planted have marl and clay soils. After manual harvesting, the grapes are lightly crushed and destemmed, and the must is fermented for around 10 days after a short maceration. The must is kept in contact with the skins by pumping over and gentle crushing, and the temperature is raised slightly at the end of fermentation to achieve better color and flavor extraction from the grape skins.

This fine South Tyrolean Merlot is an excellent accompaniment to dark and red grilled meat, hearty, tasty dishes and spicy medium-ripe and mature cheeses.
