The Mormoreto by Castello di Nipozzano of the Frescobaldi family impresses with its impenetrable strong ruby red in the glass, on the nose it presents itself complex with aromas of ripe red fruits such as blackberries and raspberries, notes of bitter cocoa powder, cocoa butter and roasted coffee beans and light notes of vanilla and cinnamon, as well as cloves, jasmine and white tea. In taste, the mormormoreto is persistent, round, soft and velvety, on the palate and in the aftertaste, the impressions perceived by the nose are confirmed, additionally enriched with a clear note of melted chocolate, raspberry freshness, whisky, vanilla tobacco.
Production of the Mormoreto of Castello di Nipozzano
This red wine from the Frescobaldi family of Castello di Nipozzano is named after the Mormoreto vineyard of the same name, which was rebuilt in 1976 and since 1983 has produced this award-winning, opulent and long-lasting wine, which only sees the light of day in the best vintages.
After manual harvesting, the Cabernet Sauvignon, Cabernet Franc, Merlot and Petit Verdot grape varieties are fermented separately for 35 days in stainless steel tanks at a controlled temperature, macerated and left on the skins for another 20 days. Alcoholic fermentation is immediately followed by malolactic fermentation. The cuvée is then aged for 24 months in partly new barriques, partly used for the second time, and then aged for a further 6 months in the bottle.
Food pairing for the Mormoreto of Castello di Nipozzano by Frescobaldi
