The top wine Quercus from Quinta de Quercus is vinified only in particularly good vintages by the two winegrowers Sam Harrop and Tomás Buendìa from the Tempranillo grape.
In the glass, this wine impresses with a deep dark ruby red. The complex bouquet pampers the nose with the typical aromas of the grape variety: juicy cherry, meets fresh strawberries and juicy plum. The red fullness of fresh herbs - such as thyme and rosemary - and liquorice are underlined. On the palate, this Spanish red wine is full-bodied with a velvety-soft texture. The well-structured body harmonizes perfectly with the balanced tannins. The finale comes with a wonderful, expressive length and berry nuances.
Vinification of Quercus Red Wine The Tempranillo grapes
for this red wine come from 30-year-old vines in the individual vineyards of Viña Ocaña and Camino La Morras. The two winemakers Sam Harrop and Tomás Buendìa pursue a clear philosophy of terroir-shaped layered wines from native Spanish grape varieties, with depth, elegance, complexity and maturity potential.
The carefully hand-picked and selected grape material from the two individual layers is gently pressed. The resulting mash is fermented under temperature control in stainless steel tanks. Wood ageing takes place for a total of 12 months in American and French oak barriques. Only then is this wine bottled.
Depending on the vintage and course of the harvest, this wine is "newly created" in order to optimally exploit the high potential of the Tempranillo grapes of the two layers.
