Vinification of the Rosé de La Chevalière of Laroche
This cuvée is vinified from the Grenache and Syrah grape varieties. The grapes are harvested in the cool hours of the night and immediately chilled in the winery to preserve their aroma and freshness.
All the grapes are gently pressed and the must is kept cold until the cloudy particles have settled on the ground by themselves. After this natural clarification, the must was fermented in stainless steel tanks and aged in them for 3 months. In order to maintain the intense character of the grape varieties, this cuvée was filtered only minimally before bottling.
