Colombier - the soul of the South of France

The Union Caves Coopératives de Cébazan is a large community of winemakers who have wines made from all over the South of France. Thus, Colombier also includes wines from Gascony, which borders Spain in the southwest of France, and at the same time from the Pays d'Oc in the southeast of the country.

The Greeks brought the wine

Winegrowing in the south of France has a long history. The Greeks founded the settlement of Massalia, which is now the city of Marseilles, here around 600 BC. They brought the vine with them to France, where the plant could thrive wonderfully due to the warm climate. From then on, viticulture became a successful branch of the economy of the south.

The Languedoc

The south of France benefits directly from the Mediterranean climate that prevails here. Typical of the Languedoc, for example, are the rosé wines of the region, which enjoy fame status. The terroirs of the Languedoc could hardly be more different, so there are soils of:

This diversity is naturally reflected in the wines from this coastal region.

Viticulture in Gascony

The Gascony

Gascony, on the other hand, is mainly known for its white wine. The region is strongly influenced by the Atlantic winds, it is mostly humid here in spring, but sunny the rest of the year. Soils of clay and sand, which were washed up long ago, characterize the Gascogne.

In the past, the wines of this region were often used as colouring agents for Bordeaux wines, but since the invention of the railway, the region has slowly been able to break away from its big sister in the north and today produces its own wines full of character.
