The goal is good balance in the vineyard and ripe grapes.

The Nebbiolo grapes are harvested selectively by hand, mostly late in autumn. Only ripe and intact berries reach the cellar. Strict sorting already takes place in the vineyard to secure the quality of the later wine. The grapes are transported in small crates to prevent crushing.

In the cellar, the berries are gently destemmed and pressed. Fermentation takes place with temperature control in stainless steel or traditional vats. During maceration, the cap is regularly punched down or pumped over.
