Cantina Distilleria Pisoni

The origins of Distilleria F.lli Pisoni are somewhat obscure, as the tradition of winemaking has been carried on by the many generations of the Pisoni family that have taken turns over the years. From the time of the Council of Trento (1545-1563) there are records of a certain Carlo Antonio Pisoni, official supplier of wine and spirits to the court of Cardinal Cristoforo Madruzzo, then prince-bishop. At the turn of the 1990s and the 2000s, Arrigo's two sons, Elio and Giuliano (who are still active in the company), together with Vittorio's two sons, Andrea and Francesco, took over the management of the company.

For the Pisoni family, distilling grappa is an art. There are no schools that teach distilling; progress in the field is achieved through a combination of experience and experimentation. The modern distillery, renovated in 2003 and designed directly by the owners, is the result of a technological evolution guided by four generations that have made their contribution to innovation combined with the ancestral experience. From the beginning of the twentieth century, fired by wood fires, we have arrived at the current steam-powered system, where we can admire the water bath boilers crowned by magnificent columns, also made entirely of copper. An important contribution to this development was made by Tullio Zadra (1905/1991), a master coppersmith from Trentino and father-in-law of Arrigo Pisoni, who is known for having introduced the bain-marie distillation method with flat grinding columns in Trentino. Some parts of the plant still bear the plaque of his famous workshop.
