  1. Selection of the Pomace: Only first-rate, fresh, and healthy pomace is used, which is distilled immediately after pressing.
  2. Distillation: The distillation takes place very slowly in special copper stills to optimally extract the volatile components responsible for the aromas.
  3. Aging: After distillation, the Grappa rests for at least six months in special stainless steel containers to refine its aromas and develop a harmonious flavor balance.

Today, Villa de Varda is managed by the fifth generation of the Dolzan family. Cav. Luigi Dolzan, a passionate heir to the family traditions, runs the business together with his sons Michele and Mauro.
