The Akashi-Tai sake brewery is a small, artisanal sake producer located in the city of Akashi, a fishing town in Hyogo Prefecture in western Japan.
Akashi-Tai - Small sake brewery with worldwide fame
The name Akashi-Tai is taken from a gourmet specialty from Akashi, namely a sea bream that is particularly comfortable in the strong ocean current off the coast of the city. As a result, Akashi-Tai bottles also feature a small corresponding fish in the logo. Hyogo is considered the birthplace of sake and is the traditional capital of sake breweries in Japan. The best sake rice also comes from here and the region is known for its particularly pure water.

Tradition as the highest good
Sake is brewed exclusively according to traditional methods and using only the best raw materials from the region. Nevertheless, the latest technology is used, but always in harmony with a deep-seated understanding and respect for centuries-old craftsmanship.
The origin of sake dates back more than 2,500 years. At a time when the cultivation of rice became prevalent in Japan. Over the years, sake has naturally evolved somewhat. Today's premium ginjo sakes, for example, are a relatively recent development, having been around for only about 40 years. Sake is made from

and is more similar to beer than to wine. In Germany, the term rice wine is often used, which is unfortunately wrong. The alcohol content of sake is usually between 13 to 18% vol. and can sometimes rise to 21% vol. Anything above that, however, may no longer be classified as sake.

Akashi-Tai-Sake only from the best rice
The area around the city of Akashi is considered very fertile. The best sake rice Yamada Nishiki grows here in particularly high quality. But other fruits of the earth also thrive magnificently in the region, which gives President Yonezawa new ideas. For example, he produces the luxurious plum sake Shiraume "White Plum" from the Japanese plum. The Akashi Tai brewery is relatively small, with just ten employees, but thanks to President Yonezawa it has managed to achieve worldwide fame. So you may well come across an Akashi Tai sake in one Japanese restaurant or another.
