The Art of Winemaking
Modern Techniques and Traditional Values
Winemaking combines traditional craftsmanship with modern technology. Every step—from careful harvesting to bottling—occurs under strict quality controls to preserve the natural freshness and complexity of the grapes.
White Wines and Red Wines
White wines like “Oros” and single-varietal Assyrtiko are fermented in stainless steel tanks and aged “sur lie” for at least 6 months, adding extra complexity. The red wines, including “Philosopher” and single-varietal Xinomavro, are initially fermented in stainless steel tanks and then partially refined in French oak barrels to achieve an elegant finish.
The Innovative Rosé “Orator”
The rosé is produced through a cold extraction at around 6°C over 8 hours, allowing for an intense yield of color and aroma. The result is a fresh, light wine with intensely fruity and floral nuances.
Varieties and Characteristics of the Wines
White Wines: Oros and Assyrtiko
The “Oros” blend (70% Assyrtiko, 30% Sauvignon Blanc) impresses with a bright, lemony hue, aromas of bergamot, grapefruit, and white blossoms, along with a fine minerality. The single-varietal Assyrtiko enchants with its lime-green color and aromas of lime, citrus blossoms, and peach.
Red Wines: Philosopher and Xinomavro
“Philosopher” (90% Agiorgitiko, 10% Xinomavro) displays a deep purple appearance with aromas of dark berries and a hint of vanilla, while Xinomavro impresses with a complex bouquet of cherry and blackberry.
Rosé Wine: Orator
The rosé “Orator” captivates with its salmon-hued nuance and its multifaceted aroma profile featuring strawberry, cherry, and subtle cinnamon notes – ideal for summer dishes.
