Once perfect physiological ripeness has been ensured, the grapes for the Bianco Frizzante are harvested particularly quickly and at the coolest possible time of day to preserve their aromas. Following the hand-picking, the grapes are immediately taken to the press house. Here they are selected and gently pressed. The base wines are then fermented. After the composition of the final Secco, further ageing takes place using the Charmat method. La Gioiosa Bianco Frizzante then matures in the bottle for a few months before being disgorged.
