More information about Blanc Extra Brut - Dopf & Irion

The Blanc Extra Brut - Dopf & Irion presents a clear, luminous straw-yellow hue in the glass, threaded with a fine, persistent perlage. Delicate reflections recall freshly cut lemon zest and lend the appearance an elegant radiance. Even the first glance conveys pure freshness and a touch of the French way of life from Alsace.

On the nose, an aromatic interplay of lime, lemon and a hint of green apple peel unfolds. Fine notes of toasted almonds, fresh brioche crust and a delicate mineral impression provide the sparkling wine with additional depth. With some time in the glass, it develops a multifaceted complexity that reveals new nuances one after another.

On the palate, the Blanc Extra Brut - Dopf & Irion is precise and vibrant. Its extra brut style, with around 5 g/l residual sugar, displays a taut profile and crystal-clear freshness. Citrus fruits dominate the opening, followed by delicate yeast notes, almonds and a hint of white flowers. The perlage is silky and fine, carrying the aromas across the entire palate and creating an invigorating mousseux.

The structure remains linear and elegant. Lively, perfectly integrated acidity lends the sparkling wine momentum and length. The tannin plays, at most, a delicate supporting role, appearing only as a subtle structural element. The finish is long and precise, with a salty-mineral aftertaste and renewed notes of lemon and lime.

As a varietal blend from Alsace, this sparkling wine combines the strengths of different white grape varieties that authentically reflect the cool climate of the Upper Rhine Graben. Its origin in Alsace, France, shapes its character: clear fruit, a taut style and fine minerality. The region offers ideal conditions for elegant sparkling wines with pronounced aromatic tension and stylistic finesse.

Production of Dopf & Irion Blanc Extra Brut

Alsace is regarded as one of France’s most distinctive wine regions. Between the Vosges Mountains and the Rhine, a unique microclimate allows the grapes to ripen slowly and evenly. The vineyards for the Blanc Extra Brut - Dopf & Irion are located on diverse soils, ranging from sandy deposits to limestone- and stone-rich plots. This combination lends the cuvée tension, minerality and aromatic depth.

The cool nights in Alsace preserve the grapes’ fresh acidity, while the warm days provide aromatic ripeness. Deeply rooted vines make intensive use of the different soil layers. This produces grapes with concentrated fruit, perfectly suited to an extra brut sparkling wine.

The grapes are harvested selectively, often in several passes, so that only fully ripe, aromatically clear fruit reaches the cellar. The grapes are transported to the press as quickly and gently as possible to minimise oxidation and preserve the delicate primary aromas. The must flows off at low pressure, favouring an elegant style.

The fermentation of the base wines takes place under temperature-controlled conditions in stainless-steel tanks. This careful vinification preserves the pure citrus fruit, fresh acidity and delicate structure. The second fermentation then takes place in the bottle, giving the Blanc Extra Brut its fine perlage and typical sparkling-wine notes.

During ageing on the lees, the wine develops additional complexity. Delicate brioche and yeast aromas emerge without overshadowing the original freshness. Dopf & Irion’s winemaking style focuses on precision, clarity and elegance. The emphasis is on a taut, tension-filled cuvée with finely interwoven perlage and uncompromising freshness.

After sufficient ageing on the lees, disgorgement and dosage in the extra brut range follow. This very low dosage emphasises the wine’s origin, minerality and clear citrus fruit. The result is linear, purist and inviting at the same time.

Serving Suggestions for Blanc Extra Brut - Dopf & Irion

The Blanc Extra Brut - Dopf & Irion is an excellent match for delicate starters and light, aromatic dishes. Fine cuisine harmonises particularly well with its lively character. It is ideal with seafood, sushi or sashimi, as well as oysters, prawns and marinated fish.

  • Perfect aperitif for festive occasions
  • Accompaniment to seafood and fish carpaccio
  • Harmonious with fresh goat’s cheese and mild hard cheese
  • Intriguing with light poultry dishes featuring citrus notes

The sparkling wine also makes an impressive impression with vegetarian dishes. Fresh salads with citrus dressing, vegetable tempura or delicate tarts with goat’s cheese and herbs are excellent choices. Its clear, citrus-focused style brings lightness to the table and accentuates delicate aromas.

As an aperitif, the Blanc Extra Brut - Dopf & Irion provides an elegant start to the evening, whether at a candlelit dinner, wedding, reception or birthday celebration. Its fine-bubbled character is also especially charming at brunches or festive family occasions. In convivial company, it reveals its invigorating appeal particularly impressively.

The ideal serving temperature is between 8 and 10 °C. A well-chilled sparkling-wine glass supports the fine perlage and focuses the intense citrus aromas. A tall, slender glass with a slightly tulip-shaped opening is especially suitable, allowing the bouquet and mousseux to unfold harmoniously.

The Blanc Extra Brut - Dopf & Irion shows intriguing development over several years of ageing. Over time, nutty and bready nuances become more pronounced, while the youthful citrus fruit may increasingly take on more mature aromas. Cool, dark storage in a stable climate preserves its fresh character and fine perlage until the perfect moment of enjoyment.
