Casaloste - the small organic Chianti
Casaloste is a winery located in the hills of Panzano in Chianti, one of the most prestigious Chianti Classico sites, halfway between Florence and Siena. The farm extends over 18 hectares, including 10 hectares of D.O.C.G. vineyards and 2 hectares of D.O.P. olive trees.
The owners Giovanni Battista d'Orsi, agronomist and oenologist, and his wife Emilia personally take care of the winery.

Giovanni Battista d'Orsi, after studying agronomy in Naples, moved to the heart of the Chianti Classico region, where he took over the Casaloste winery. Since then, he and his wife have strived to make the winery as sustainable as possible. For example, most of the electricity is generated by the winery's own solar panels and the rest is sourced from sustainable energy suppliers. Sustainable methods are used for pest control, which mainly means reducing the use of copper in the vineyard.
Casaloste - Tuscany and yet different
The general organization of Fattoria Casaloste reflects the typical Tuscan tradition of agricultural activities in harmony with the seasons. But in the details, things are radically different. The winery's motto, "Essere piccoli per fare grandi vini" ("Be small to make great wines"), encompasses Fattoria Casaloste's entire winemaking philosophy.

Being small means dedicating oneself to the careful control of the grapes on the vines, to the correct pruning of the vines, to the quick and targeted intervention in case of diseases and to the choice of the best time for harvesting and other timely interventions. Being small means being flexible to avoid damaging rainy days during the harvest or prolonged ripening on glorious, sunny October days. And even more, special machinery is used in the cellars to avoid "stress" for the wines.
Aging of Casaloste wines
During the winemaking, the aging and in all other phases, analyses and quality controls are constantly carried out. The pressing and destemming of the grapes is carried out in sophisticated stainless steel machines that can vary the speed and intensity of the pressing. Fermentation takes place exclusively in stainless steel tanks at a constant temperature. The aging is certainly one of the most important moments for the wine. The use of French oak makes it possible to find a good balance between the oak flavor and the fruit, giving the final product a harmony of taste and olfactory sensations. During this delicate phase, the winemaking is supported by laboratory analysis and tasting. After bottling, the wine is stored in cellars with controlled temperature, so that the temperature of the wine never rises above 17 ° C, even in summer.
