Château de la Chesnaie Muscadet Sèvre-et-Maine sur Lie by Chéreau Carré presents itself in a bright straw yellow with silver reflections. The distinctly fruity and very freshly scented bouquet is reminiscent of citrus fruits, white peach, nectarines and slightly exotic notes of lychee, melon and pineapple. This is crowned by delicate hints of white flowers such as honeysuckle, delicate roasted aromas of freshly toasted white bread and a hint of sea air. The crystal-clear palate with the animating and crisp fresh acidity gives the wine vitality, strength and lightness. It finally opens into a very nice and long finale with a herbaceous aftertaste of lemon and grapefruit.
Vinification of the Muscadet Chéreau Carré of the Loire
The healthy and fully ripe Muscadet grapes are brought to the winery as quickly as possible, gently pressed here in pneumatic presses and not with maximum juice yield, then the must is pre-clarified by cold sedimentation and fermented in about 2-3 weeks with pure yeasts. According to the AOC regulation, the wine remains on the fine yeasts (sur lie) after fermentation during the entire maturation period until bottling. The traditional bâtonnage, the regular stirring of the fine yeast store, gives the fruit even more expression and the wine as a whole an even more elegant body and balance. After maturing for at least four months, the white wine is bottled directly from the yeast storage at Château de la Chesnaie in spring.
Food recommendation for the Muscadet from the Val de Loire
This wine immediately makes you want more and harmonizes perfectly with fresh or gratinated oysters, crayfish, mussels in cream sauce, seafood salads, fine fish dishes (e.g. salmon, briefly fried in butter) or goat's cheese. But it is also excellent as a refreshing aperitif.
