Chez Jau Sauvignon Blanc - Château de Jau

This varietal French wine presents in the glass wonderfully expressive notes of kumquats, pomelo, acacia and white currants. These are joined by hints of juniper, garrigue and lovage.

Vinification of the Château de Jau Chez Jau Sauvignon Blanc

This white wine clearly focuses on one grape variety, Sauvignon Blanc. Only the best grapes were harvested for this wonderfully elegant single-varietal wine from Château de Jau. In Roussillon, the vines that produce the grapes for this wine grow on soils of clay, limestone and slate. After the hand harvest, the grapes quickly reach the press house. Here they are sorted and carefully crushed. Fermentation follows in stainless steel tanks at controlled temperatures. The vinification is followed by aging for several months on the fine lees before the wine is finally drawn off.

This French wine is best enjoyed well chilled at 8 - 10°C. It is perfect as a companion to fruity endive salad, roasted trout with ginger pear or stir-fried vegetables with fish.
