More information about Shiraz - Equinox
The Shiraz - Equinox from the Ștefan Vodă wine-growing region of Moldova presents itself in the glass with a deep ruby-red color, threaded with violet reflections reminiscent of ripe berries. The bouquet unfolds intensely and with great complexity: dark blackberries, juicy blueberries, and ripe sour cherries combine with notes of black pepper and delicate cinnamon.
On the nose, dark fruit mingles with a hint of vanilla, toasted wood, and a delicate touch of smoke. On the palate, the wine is full-bodied and powerful, carried by a velvety texture that impressively highlights every nuance of the Shiraz grape variety. Well-integrated acidity lends freshness, while ripe tannins emphasize structure and length.
The impression on the palate remains present for a long time: concentrated berry aromas, subtle spice, and a fine hint of dark chocolate shape the finish. The structure is harmonious yet firm, with a clearly defined body and a balanced interplay of fruit, spice, and wood.

Production of Shiraz – Equinox
The grapes for the Shiraz - Equinox come from selected sites in the Ștefan Vodă wine-growing region in southeastern Moldova. The climate there has clear characteristics: warm, sunny summers, moderately cool nights, and a noticeable influence of continental air masses shape the grapes’ ripening phase. The vines take root in soils composed of clay, limestone, and occasional sandy deposits, which lend the wines pronounced minerality and depth.
The vineyards feature carefully tended vines whose yields are deliberately limited. This creates a high concentration in the grapes, which later contributes to richness and aromatic density in the cellar. The harvest is carried out selectively, with optimally ripe grapes transported to the winery in small batches to preserve the fruit as intact as possible.
After delivery to the winery, the Shiraz undergoes gentle maceration and fermentation, during which color and aromatic compounds are extracted from the grape skins. The controlled fermentation temperature preserves the fresh fruit while also supporting the development of the characteristic spicy notes for which Shiraz is so highly valued.
The wine then matures for around 12 months in 225-liter French oak barriques. Mostly previously used wood is employed, lending the wine structure and subtle toasted aromas without overpowering the fruit. This aging method produces delicate nuances of vanilla, cinnamon, and lightly toasted nuts, which blend harmoniously into the overall profile.
The Equinox producer’s style has a clear signature: precise fruit, balanced oak influence, and a velvety tannin structure. The wine is powerful yet always remains elegant and inviting to drink. Each vintage expresses the terroir of Ștefan Vodă in an unmistakable way while also reflecting the meticulous work carried out in the vineyard and cellar.
Serving Recommendations for Shiraz – Equinox
With its richness and spiciness, the Shiraz - Equinox accompanies a wide range of hearty dishes. Particularly appealing combinations arise with dark meat and intensely flavored dishes, where the wine’s fruit and peppery spice unfold especially impressively.
- Grilled beef or lamb with a herb crust
- Braised beef cheeks or lamb shank
- Game dishes, such as venison ragout or venison medallions
- Rich pasta dishes with mushrooms or ragout
- Hard cheese and semi-firm cheeses with a spicy rind
- Charcuterie platters with air-dried ham and salami
As a versatile red wine with character, the Shiraz - Equinox lends a stylish setting to special moments. It pairs excellently with relaxed evenings among friends, a festive menu, or an elegant dinner for two. It also reveals its full depth and presence as a contemplative wine by the fireplace.
The ideal serving temperature is between 15 and 18 °C. At this temperature, the wine fully develops its aromas, while the tannins and oak structure appear harmoniously integrated. Brief decanting before serving further encourages the development of the spicy and fruity notes.
For storage, a cool, dark place with a constant temperature is recommended. Ideally, the bottle should be stored horizontally so that the cork remains in contact with the wine. Under suitable conditions, the Shiraz - Equinox develops additional complexity after several years of aging: The fruit becomes riper, spice notes intensify, and tertiary aromas such as leather and tobacco emerge.
Whether as a characterful accompaniment to food, a gift for wine lovers, or a new discovery from Moldova, this Shiraz enriches any sophisticated wine selection with depth, expression, and elegance.
