More information about Gevrey-Chambertin AOP - Château de Melin

The Gevrey-Chambertin AOP - Château de Melin shines in the glass with a deep ruby-red hue and a slightly transparent rim. Delicate bright garnet reflections hint at the fine character of this Burgundy without sacrificing colour intensity. Even with the first swirl, a complex bouquet emerges, immediately transporting you to the vineyards of the northern Côte de Nuits.

Juicy red berries come to the fore on the nose, above all cherry and raspberry, closely interwoven with aromas of blackcurrant and a touch of sour cherry. Beneath lie notes of damp forest floor, leaves, dried herbs and a fine earthy spice. Subtle hints of smoke, cedarwood and black tea join in, accompanied by a trace of violet and light undergrowth. With exposure to air, the wine unfolds layer after layer of further nuances and gains considerable depth.

On the palate, this Pinot Noir is dry, with a dense, precise structure. The acidity is taut and lively, carrying the fruit powerfully across the entire palate and giving the wine impressive tension. The tannins are clearly prominent, yet appear ripe, grainy and finely distributed. This creates a firm, structured mouthfeel that complements the intense fruit and cool spice beautifully. The body is medium-dense to full, with an elegant stature and a long, mineral-driven finish.

Production of Gevrey-Chambertin AOP – Château de Melin

The vineyards of Gevrey-Chambertin are located in the northern part of the Côte de Nuits in Burgundy. Limestone-rich soils with clay layers, in places interspersed with gravel and fine deposits of stones, shape the character of the wines here. The vines root deeply into the subsoil and draw a distinctive minerality from the different soil layers. The temperate, rather cool climate, with marked temperature differences between day and night, gives the Pinot Noir freshness, precise fruit and a refined aromatic profile.

At Château de Melin, careful, sustainable cultivation is at the heart of the approach. The vineyards are tended in close harmony with nature so that the vines and grapes can faithfully reflect their surroundings. Low yields increase the concentration of the berries and produce intense, expressive musts. Harvesting is carried out by hand, parcel by parcel, so that only fully ripe and aromatic grapes reach the cellar. The grapes are selected directly in the vineyard and then on sorting tables.

In the cellar, destemming is followed by gentle maceration and fermentation, with temperature control and duration precisely coordinated. The aim is deep colour extraction, finely extracted tannins and the preservation of the characteristic Pinot Noir fruit. Regular pump-overs and gentle punch-downs of the cap release colour, aromatic compounds and structure from the grape skins without creating harshness.

After fermentation, the wine matures in small wooden barrels, predominantly barriques. Some of these are made from new French oak, while the remainder are previously used barrels. This creates a fine interplay of oak notes without allowing the wood to overshadow the grape variety. Barrel ageing rounds out the tannins, adds nuances of vanilla, toasted aromas, light smoke and subtle spice, and gives the wine additional depth. The winemaker’s style focuses on elegance rather than opulence, length rather than weight, and precise fruit rather than dominant oak.

Before bottling, the wine undergoes gentle clarification, partly through natural sedimentation and partly through careful racking. Filtration is used only very sparingly so that the character of the terroir is fully preserved. The finished Gevrey-Chambertin AOP - Château de Melin thus reaches the Burgundy bottle as a powerful yet finely nuanced Burgundy wine.

Serving Recommendations for Gevrey-Chambertin AOP – Château de Melin

This Gevrey-Chambertin pairs superbly with rich dishes and intensely flavoured cuisine. Its dense structure and distinctive tannins accompany generously seasoned dishes as well as refined, classic cooking. The combination of red fruit, forest floor and spicy oak notes opens up numerous culinary possibilities.

  • Braised dishes of beef, lamb or game
  • Duck breast with a fruit-based sauce, such as cherry or cassis
  • Mushroom dishes with porcini or chanterelles
  • Truffle pasta or risotto with dark toasted notes
  • Hard cheeses and washed-rind cheeses with intense aromas

As an accompaniment to food, this Burgundy is ideal for celebratory dinners, refined menus and special occasions. At romantic dinners, birthdays, holidays or upscale business dinners, the wine reveals its full character. Its complexity is particularly evident in a large Burgundy glass; a glass with a wide opening supports the development of the aromas and the perception of the texture.

The ideal serving temperature is between 8 and 10 °C for a very fresh, vibrant impression at the outset. As the temperature rises in the glass, the aromatic spectrum expands, the fruit becomes more intense and the tannin structure appears rounder. Decanting before serving is particularly recommended for younger vintages so that the aromas and flavours can fully unfold.

Thanks to its dense structure, taut acidity and distinctive tannins, this wine has considerable ageing potential of around nine years from the vintage. Cool, dark storage at a constant temperature with sufficient humidity supports the development of tertiary aromas. Over the years, notes of undergrowth, truffle, leather and dried fruit become more pronounced, while the fruit appears increasingly refined. In this way, this Gevrey-Chambertin evolves from a powerful, structured Pinot Noir into a complex, mature Burgundy with impressive depth.
