Around the city of Limoux, the vines of the "Les Cépages" - wines find the best conditions in terroir and climate to perfectly develop their varietal aromas. The soils are heavily influenced by lime, sand and clay, hot temperatures during the day and the simultaneously cooling sea breeze from the Mediterranean, help to convince the resulting wine with powerful body, rich, intense fruit and elegance.
The grapes are destemmed and then carefully pressed. Alcoholic fermentation at a controlled temperature takes about six days, another 15 days of maceration is required before all other flavours, colours and tannins pass into the mash and give the wine its variety of aromas. The removal takes place in the steel tank.

Since 1995, the Baron Philippe de Rothschild family has been producing grape varieties. The Baroness Philippine de Rotschild found the ideal conditions for this new project in the vineyards of the Languedoc-Roussillon, close to the Mediterranean coast and near the eastern Pyrenees.
This is how the line "Les Cépages" (French for grape variety) arose. Wines typical of the respective grape variety, modern, uncomplicated, with their own character, which should offer young people and wine newcomers in particular easy access to the world of Rothschild wines, and the baroness also enjoyed themselves.
