The vines here dig their roots deep into soils of clay and sandstone. After the hand harvest, the grapes reach the winery by the fastest route. Here they are selected and carefully broken up. Fermentation follows in small wood at controlled temperatures. After the end of fermentation, the Lion Tamer Cabernet Sauvignon Napa Valley is aged for another 20 months in French and American oak barrels.
