Robert Mondavi's The Reserve Cabernet Sauvignon is an excellent red wine cuvée made from Cabernet Sauvignon (93%), Cabernet Franc (6%) and Petit Verdot (1%) grape varieties.
In the glass, this wine shines in a deep garnet red with purple reflections and a dark red core. An intense aroma firework is revealed in the nose: violet and lavender combine with sweetly ripened black currants - accompanied by a hint of laurel leaves, graphite and spicy hints of oak wood.
The taste is nothing short of the bouquet: the palate expects expressive notes of juicy blueberries, ripe blackberries, cassis and plums. Filigree notes of fresh herbs, liquorice and a present minerality are added. The impressive aroma blends with the juicy, opulent body, which is enveloped by a powerful, multi-layered texture. The tannins are full and sweetly matured and accompany you to the very long, supple and elegant finale.
Vinification of the Mondavi Cabernet ReserveThis
cult wine was made from the grapes of the legendary To Kalon (Greek "the Beautiful") vineyard, which is considered the best terroir in North America for Cabernet Sauvignon. The harvest in October is done exclusively by hand in small reading boxes. Arriving in the To Kalon wine cellar, the harvested goods are strictly selected.The
berries are traditionally fermented in oak barrels. The mash is not pumped, but transported by gravity and gently pressed in classic basket presses. The long maceration time of 37 days deprives the berry skins of the gentle tannins, the wonderful aromas and the strong colour. Finally, this wine matures for a total of 18 months in French oak barriques (100% new wood).
