Philipp Kuhn - A signature of its own

50% of the vineyards of the Kuhn winery are planted with red grape varieties. The emphasis is on Pinot Noir complemented by grape varieties such as Pinot noir precoce, St. Laurent merlot and Cabernet Sauvignon. The red wines of Phillip Kuhn are vinified according to traditional methods. The grape harvest is done consistently by hand, sometimes in several passes from early October to November. This is the only way to obtain the optimal ripeness and at the same time healthy berries. These are separated from their stalks and fermented by classical maceration, sometimes for several weeks. All red wines are also stored in wooden barrels. Second wines mature in large wooden barrels or in old barriques, the top qualities in younger or new barriques. The storage time is between 16 and 20 months.

50% of the vineyards of the winery are planted with white vines. The focus is on Riesling and the white Burgundy varieties, supplemented by grape varieties such as Gewürztraminer, Sauvignon Blanc and Viognier. Kuhn's white wines are primarily vinified reductively in stainless steel or old wooden barrels. All grapes are also harvested by hand. After the berries are removed from the stems, a variable maceration period is applied depending on the quality and type of wine. Then, without pumping, they are brought to the pneumatic winepress by pure fall pressure and pressed very gently. The musts are fermented in an aroma-preserving manner at fermentation temperatures below 20°C, partly spontaneously, partly with pure cultured yeasts. This ensures a fine varietal aroma, a powerful body and a very good shelf life of the white wines.
