Production of the Pierre André Pommard Les Epenots 1er Cru AOP - Francois Martenot
The Pierre André Pommard Les Epenots 1er Cru AOP - Francois Martenot comes from the traditional subregion of Pommard on the Côte de Beaune in Burgundy. The climate is continental, with warm summers and cool nights, allowing the Pinot Noir grapes a long ripening period. The soils of the Les Epenots Premier Cru vineyard consist of limestone-rich marl and clay with abundant stones, providing excellent drainage and allowing the vines to develop deep roots.
The vines are planted in the traditional Burgundian style at high vine density, encouraging low yields and concentrated grapes. Harvesting is carried out selectively by hand, grape by grape, with rigorous sorting already in the vineyard and subsequently in the cellar. Only perfectly ripe grapes are sent for fermentation so that the characteristic finesse of the terroir can emerge without distortion.
At Maison François Martenot, the grapes undergo gentle maceration in temperature-controlled vessels. An initial cold maceration extracts delicate fruit aromas and fine color pigments from the grape skins before alcoholic fermentation begins. During this phase, gentle pump-overs and punch-downs intensify the extraction of color, tannin and structure without compromising elegance.
After fermentation, the wine matures for several months in oak barrels, some of them new barriques. The barrels are selected with the utmost care so that oak and fruit achieve a harmonious balance. The oak adds further complexity to the wine, contributing notes of toast, vanilla, spice and delicate smokiness without overpowering the typical Pinot fruit.
The style of François Martenot combines traditional Burgundian craftsmanship with modern precision in the cellar. The aim is to create a Pommard with a clear sense of place, intense fruit, structured tannins and excellent longevity. Each individual batch reflects the winemaker’s commitment to elegance, depth and authenticity.

Stored in a cool, dark room at a constant temperature with the bottle lying horizontally, this Premier Cru shows remarkable development potential of up to around 15 years from the vintage. With increasing maturity, additional notes of undergrowth, leather, truffle and dried fruit emerge, expanding the aromatic spectrum and making the character of this great Burgundy even more impressive.
