Vinification of Lawson's Dry Hills Pinot Noir Reserve
The basis for the balanced Pinot Noir Reserve from New Zealand is grapes from the Pinot Noir variety. The grapes grow under optimal conditions on New Zealand's South Island. The vines here root deeply into clay soils. When they are perfectly ripe, the grapes for the Pinot Noir Reserve are harvested exclusively by hand without the help of strenuous and less selective grape harvesters. After manual harvest, the grape bunches are immediately transferred to the press house. Here they are sorted and gently crushed. This is followed by fermentation in small and large wooden barrels at controlled temperatures. After fermentation is complete, the elegant Pinot Noir Reserve is matured for several months in barriques and 500-liter barrels made of French oak.
