Patraiki Wines' Retsina is a Greek specialty. The resin of the Aleppo pine is added to the dry table wine to give it a distinctive, resinous flavor. Originally, this wine was probably made by sealing the amphorae in which the wine was stored with resin. This also got into the wine and dissolved in it. Besides the changed aroma, a longer shelf life was a positive side effect. In the past, the resin content was three to four times higher, while today's varieties are somewhat lighter.
Vinification of the retsina of Patraiki wines
Retsina is classically vinified from the Savatiano grape variety and blended with Assyrtiko and Roditis. Nowadays, the resin is added to the wine in pieces and removed at the first racking.
