Vinification for the ULISSE Passerina Terre di Chieti IGP from Tenuta Ulisse
After harvest, the grapes underwent a cold maceration with the skins, then they were destemmed and gently pressed. Fermentation took place at a temperature of 8-11° Celsius in stainless steel tanks. This Passerina was then aged for 3 months.
