Vinification of the Domaine de la Baume Vieilles Vignes

The basis for the powerful Vieilles Vignes from the Languedoc are grapes from the grape varieties Grenache and Syrah. When the perfect physiological maturity is ensured, the grapes for the Vieilles Vignes are harvested exclusively by hand without the help of coarse and less selective machines. After the harvest, the grapes are immediately transferred to the press house. Here they are sorted and carefully crushed. Fermentation then takes place in stainless steel tanks and small wood at controlled temperatures. Vinification is followed by aging for several months in oak barrels.
