The Eymann Winery
The story of the Eymann winery begins in 1982, when Rainer Eymann takes over the winery and immediately causes head-shaking among his colleagues in the surrounding area. He switches the winery to organic farming. This makes him one of the first organic winegrowers in the Palatinate. in 2004, the winery is certifiedbiodynamic by Demeter . On 18 hectares of vineyards, son Vincent continues this path full of commitment and ideas.

The fact that this path naturally also requires greater effort is evident from the vineyards of the winery from the Palatinate. The prerequisite for healthy grapes for harvesting is a lively and well-aerated soil. Soil pressure caused by too frequent driving over the vineyards destroys soil life, which is why most of the work in the vineyard is done by hand. The main focus is on the foliage work. Only with an intact but loose foliage can the grapes reach their full ripeness and remain healthy. In addition, there is the use of biological preparations of rock flour, herbs or similar.
Another important aspect of biodynamic cultivation is the greening of the individual rows. On the one hand, nutrients are bound, which are available to the vines again after turning, on the other hand, the greenery provides a habitat for beneficial insects. Of course, the harvest is also done by hand. In the cellar, the musts are fermentedspontaneously for the most part . Afterwards the white wines of the winery Eymann lie long on the fine yeast and develop so strong her powerful aroma. The natural clarification is also supported by this, fining agents are not necessary. The red wines of the winery are stored up to 2 years oak barrels or barriques until they show all their strength and fullness.
