Ximénez-Spinola a story around the grape Pedro Ximénez 

Ximénez-Spínola with the winery Jerez is the successor of Phelipe Antonio Zarzana Spínola, whose first export dates back to 1729 in notarial documents, although the winery has no evidence of its commercial activity until 1736 and especially its grape variety culture, which was found only from 1752. Today Ximénez-Spinola is already in the ninth generation, since the foundation of the company, they work like their predecessors in the winery, with eternal gratitude to those who created this work and never finished developing it. In doing so, they are laying the foundations for their children to carry on their philosophy.

We are in the most important wine region of southern Spain, formed in a fertile triangle between the municipalities of Jerez de la Frontera, Sanlúcar de Barrameda and Puerto de Santa María. The region is located in a limestone area near the mouth of the Guadalquivir River, the land was originally flooded by lagoons and salt marshes. The sediments and fossils deposited there over millions of years, together with the exceptional moisture accumulation and their hours of direct sunlight, influence the vine.

Ximénez-Spinola grape culture

Apparently, with the Tercio de Alemanes, the winegrowers arrived, bringing to Spain the first shoots of some grapes previously unknown in the Iberian Peninsula. It was a fruit with great similarities to the Riesling, Weissable and Elbling varieties. However, having developed its own characteristics in Spain for almost five hundred years, it does not exactly match any of them.
According to oral tradition, the name of the grape was phonetically deformed, changing the word "Peter" to "Pedro" and "Siemens" to "Ximénez". This theory is documented in the 1636 edition of the work "Cosmographía Generalis" by the Dutch geographer Paul Merula in Amsterdam. In the winery, this grape is now used to obtain special products that reflect the soul of the winegrowers and the region, such as:
