Vinification of the Terre di Campo Sasso Primitivo di Manduria

This powerful red wine from Italy is vinified from the Primitivo grape variety. In Puglia, the vines that produce the grapes for this wine grow on soils of limestone. After the hand harvest, the grapes reach the winery by the fastest route. Here they are selected and carefully crushed. Then fermentation takes place in small wood at controlled temperatures. After the completion of fermentation, the Primitivo di Manduria is aged for another 6 months in oak barriques.

This Italian red wine is best enjoyed at a temperature of 15 - 18°C. It is perfect as an accompaniment to cabbage roulades, lamb stew with chickpeas and dried figs or spaghetti with caper and tomato sauce.
