The liquid soul of Cilento: A journey to Azienda Agricola San Salvatore

South of the ancient temples of Paestum, where the azure Tyrrhenian Sea meets the rugged, powerful hills of Cilento National Park, there is a place of magical allure. The sound of the sea wind moving through the rows of olive trees, the blend of scents of wild thyme, myrtle and earthy limestone, and the scorching sun of southern Italy create a setting that has inspired culture and agriculture for thousands of years.

Amid this historic cultural landscape of Campania, a modern winemaking marvel unfolds, combining tradition and innovation in an incomparable way. Those who taste the wines of this terroir discover not only distinctive grapes, but also the authentic essence of an entire region. Azienda Agricola San Salvatore is the living embodiment of this dream: a symbiosis of untamed nature, time-honoured animal husbandry, pioneering sustainability and liquid perfection.

A brief introduction to Azienda Agricola San Salvatore

Azienda Agricola San Salvatore is far more than a traditional wine producer; it is a holistic ecosystem and a vibrant centre of Cilento culture. Located in the historic south of Campania, near the world-famous Greek temples of Paestum and the rolling foothills around Stio and Giungano, the estate represents the renaissance of a region that for a long time stood in the shadow of other Italian wine-growing areas.

Fascinated by the untouched nature of Cilento, dynamic entrepreneur Giuseppe Pagano founded Azienda Agricola San Salvatore in 1988. What began as a vision of diversified agriculture – which to this day includes impressive buffalo breeding for the production of exquisite buffalo mozzarella – quickly developed into one of southern Italy’s most respected quality wineries. With around 21 hectares of vines set within a total area of more than 110 hectares of forests, olive groves and pastureland, San Salvatore embodies the proud identity of the protected geographical indication (IGP) Paestum and the designation of origin (DOC) Cilento.

The philosophy of Azienda Agricola San Salvatore: harmony with nature and terroir

The philosophy of Azienda Agricola San Salvatore rests on an unshakeable foundation: deep respect for the land, an uncompromising pursuit of quality and a sincere commitment to sustainability. At San Salvatore, viticulture is not an intervention in nature, but a partnership and dialogue with it.

Sustainability as San Salvatore’s elixir of life

The winery follows organic and biodynamic principles out of conviction. The use of synthetic crop protection products or chemical fertilisers is strictly forbidden. Instead, the natural cycle is used: the estate’s own buffalo herd provides valuable organic fertiliser that revitalises the soils and naturally enhances the resilience of the vines.

Energy independence and a vision for the future

To keep its ecological footprint as low as possible, Azienda Agricola San Salvatore has modern photovoltaic systems and its own biogas plant. This enables the winery to generate a large proportion of its required energy itself and operate almost climate-neutrally. This uncompromising green spirit is reflected in the purity and finesse of every drop: the wines appear unadulterated and vibrant, reflecting the energy of their place of origin without cosmetic intervention.

The growing region and its special features: Campania & Cilento

Campania is one of the oldest wine-growing regions in the world. The ancient Greeks and Romans already valued the region’s nutrient-rich soils and unique climate, enthusiastically naming it Campania Felix – happy Campania. The wine landscape is characterised by enormous diversity: volcanic ash soils on Mount Vesuvius, steep terraces on the Amalfi Coast and the wild limestone- and clay-rich hills of Cilento in the south create a fascinating mosaic for viticulture.

The terrain of Azienda Agricola San Salvatore benefits from microclimates that could hardly be more contrasting and ideal:

  • Maritime influence: The vineyards near the coast close to Paestum are constantly ventilated by maritime breezes. This prevents moisture build-up, protects the grapes from fungal diseases and gives the berries a subtle, salty minerality.
  • Elevations & thermals: Other estate parcels are located in the cooler inland elevations around Stio, up to 500 metres above sea level. The marked temperature differences between hot summer days and cool nights extend the ripening period of the grapes. The result is brilliant aromatic concentration combined with remarkable freshness and finely structured acidity.

The importance of the soils

The soil structure at San Salvatore is complex and varied. The lower-lying areas are dominated by calcareous loam and clay soils that retain moisture and give the wines body, creaminess and structure. In the higher parcels, the vines encounter clay-rich flysch, rock formations and loamy sandstone. These sparse soils force the vines to drive their roots deep into the rock. In this way, they absorb valuable minerals that give the wines their characteristic elegance, vibrant acidity and cool, fascinating terroir character.

The vineyard sites and grape varieties of Azienda Agricola San Salvatore

The vineyards of Azienda Agricola San Salvatore are spread across distinctive micro-terroirs in Cilento, each producing wines with its own personality:

  • Stio: A spectacular site in the heart of Cilento National Park at around 500 metres above sea level. The rugged, cool mountain climate requires a late harvest and gives the grapes – above all Aglianico – unexpected elegance, freshness and pronounced minerality.
  • Giungano: This hillside site is characterised by a warm Mediterranean climate with optimal sunlight. The soils are deep and rich in nutrients, giving the wines noble fullness, ripe fruit and velvety tannins.
  • Cannito (Paestum): Located in the immediate vicinity of the ancient ruins, these parcels benefit from the direct influence of the Tyrrhenian Sea. The loamy, sandy soils produce particularly aromatic, juicy white wines with a salty character, as well as velvety red wines.

San Salvatore is fully committed to cultivating Campania’s native, traditional grape varieties:

  • Aglianico: The undisputed queen of southern Italian red grape varieties. It produces deep-red, structured wines with high ageing potential, firm tannins and complex notes of dark berries, pepper, leather and undergrowth.
  • Fiano: A noble white grape variety renowned for its elegant acidity, body and ageing potential. It displays aromas of hazelnut, pear, white flowers and mineral nuances.
  • Greco: A traditional white grape variety that produces powerful, structured wines with pronounced acidity and notes of peach, citrus fruit and herbal nuances.
  • Falanghina: Fruity and highly refined, producing juicy, fresh white wines with aromas of green apple, exotic fruit and Mediterranean herbs.
  • Pinot Nero (Pinot Noir): As an exciting experiment, San Salvatore also cultivates a small amount of Pinot Nero in the cool elevations of Stio.

Winemaking methods at Azienda Agricola San Salvatore

All grapes are picked exclusively by hand into small crates to prevent damage to the skins and avoid unwanted oxidation. After being transported to the winery, the grapes undergo strict visual and manual selection on sorting tables. The cellar is a cathedral of modern oenology, guided by the signature of renowned oenologists such as Riccardo Cotarella and Pierpaolo Chiasso.

For most white wines and fresh rosés, maturation in temperature-controlled stainless steel tanks is preferred in order to preserve primary fruit aromas and crisp minerality in their purest form. For its premium red wines, San Salvatore uses French oak barrels (barriques and tonneaux), which give the tannin-rich Aglianico a silky texture and remarkable longevity through careful micro-oxygenation.

The wines of Azienda Agricola San Salvatore

Each San Salvatore label features the stylised silhouette of a black buffalo – a symbol of strength, connection with nature and the heritage of Cilento:

  • Trentenare Paestum Fiano IGP: Named after the Trentenare cliff near Capaccio. Pure Fiano with notes of yellow peach, apricot and linden blossom, supported by juicy minerality.
  • Calpazio Paestum Greco IGP: Named after Monte Calpazio. Bright golden yellow, with complex citrus and pear aromas, dense structure and power.
  • Pian di Stio Paestum Fiano IGP: Grown on the high plateau of Stio at an elevation of 500 metres. Impresses with cool elegance, green apple, white pepper and razor-sharp minerality.
  • Jungano Paestum Aglianico IGP: A tribute to the municipality of Giungano. Pure Aglianico with notes of blackberry, black cherry, cocoa and soft tannins.
  • Gillo Dorfles Paestum Aglianico IGP: The estate’s flagship wine, dedicated to the artist and philosopher Gillo Dorfles. Deep and layered, with forest berries, leather, tobacco and majestic structure.
  • Vetere Paestum Rosato IGP: Made from 100% Aglianico grapes. Reminiscent of fine Provence rosés, with fragrant strawberry, pomegranate and fresh acidity.

Awards, sustainability and outlook

The winery is regularly among the highest-rated producers in southern Italy. Awards from Gambero Rosso (Tre Bicchieri for Pian di Stio and Gillo Dorfles), top ratings from James Suckling (93–95 points), Robert Parker’s Wine Advocate, as well as accolades from Wine Spectator and Bibenda, confirm the path it has chosen.

San Salvatore combines the ancient power of Cilento with modern entrepreneurial spirit and a deeply felt love of nature. Through the combination of organic viticulture, its own buffalo breeding, renewable energy and a passion for native grape varieties, the estate will continue to set standards for unforgettable moments of enjoyment under the sign of the black buffalo.

Character & flavour profile

The organic wines from San Salvatore stand for Mediterranean richness, vibrancy and authentic terroir character:

  • Nose: Ripe red cherries, blackberries, Mediterranean maquis herbs and delicate toasted notes in the red wines; ripe citrus fruit, jasmine and cool minerality in the white wines.
  • Palate: Powerful yet elegantly balanced, with silky tannins, velvety texture and vibrant acidity.
  • Finish: Long-lasting, fruit-driven and marked by a fine salty note from the proximity to the sea.
