The Bin 389 from Penfolds is an outstanding complex red wine cuvée from the Cabernet Sauvignon (51%) and Shiraz (49%) grape varieties.
In the glass, this wine shines in a shiny garnet red with dark shades. The complex bouquet makes it extremely difficult to recognize the individual components. Under the influence of air, an impressive character of barrel storage unfolds, accompanied by fig, date, plum and quince aromas complemented by soy and hoisin sauce notes. A pronounced freshness with dark berries (blackberry and blackcurrant) is clearly noticeable. Notes of charcoal and Italian vegetables (zucchini, eggplant) remain discreetly in the background.
On the full-bodied, lively palate, this Australian red wine unfolds a little braid of dark berry fruits along with mineral hints (graphite and pencil lead) and sweet spice nuances. In addition, this cuvée reveals a spicy freshness, complemented by a lively acidity, well-shaped tannins and respectful oak. A wine of beautiful length, texture and great weight.
Vinification of the Penfold Cabernet Shiraz Bin 389
Separated by grape variety, the grapes are harvested in the warmer and cooler growing areas in South Australia. Once the harvested material has arrived in the wine cellar of Penfolds, one part of the mash (grape varieties - and origin separated) is fermented directly in the wooden barrel - the other part is fermented classically in a stainless steel tank. After alcoholic fermentation, this wine is aged in small American oak barrels (37% new wood). Finally, this red wine is married to the final blend and matures for just under another year on the bottle in the wine cellar of Penfolds.
