Cabernet Sauvignon - Lievland

The Cabernet Sauvignon from Lievland from Cape South Coast reveals a bright, light red color in the glass. When the glass is held at a slight angle, a transition of the color towards garnet red can be seen at the rims of this barrel-aged wine. On the nose, this Lievland red wine presents all kinds of morello cherries, mulberries, black cherries, damsons and plums. As if that were not already impressive, further aromas such as sun-warmed stone and forest floor are added through aging in small wooden barrels.

On the palate, the Cabernet Sauvignon from Lievland opens wonderfully aromatic, fruit-driven and balanced. There is dry and really dry. This red wine belongs to the latter, as it was bottled with only 2.1 g of residual sugar. Due to its striking fruit acidity, the Cabernet Sauvignon appears exceptionally fresh and lively on the palate. On the finish, this matured wine from the Cape South Coast wine-growing region finally delights with considerable length. Once again, nuances of plum and mulberry appear.

Vinification of the Cabernet Sauvignon from Lievland

The balanced Cabernet Sauvignon from South Africa is a cuvée made from the grape varieties Cabernet Sauvignon, Cinsault and Shiraz. After hand-picking, the grapes are brought to the winery as quickly as possible. There they are selected and gently crushed. This is followed by fermentation in small wooden barrels at controlled temperatures. After fermentation has ended, the Cabernet Sauvignon is aged for another 13 months in French oak barrels.

Food recommendation for the Cabernet Sauvignon from Lievland

This red wine from South Africa is best enjoyed at a temperature of 15 - 18°C. It is perfectly suited as a companion to lamb ragout with chickpeas and dried figs, fried calf’s liver with apples, onions and balsamic sauce, or vegetable couscous with beef meatballs.
