Caves Bailly-Lapierre Origin

A meeting of many winegrowers a long time ago, it is now the heirs of a long winegrowing tradition who joined forces in 1972. One of the things they did at that time was to promote the project to obtain the controlled designation of origin (AOC) "Crémant de Bourgogne". The decree published in October 1975 is therefore the culmination of their efforts. The first designation of origin "Crémant" was born in France. Since then, they have worked tirelessly in their profession, both in the vineyard and in the cellars, to develop wines that are purer, more balanced and more refined, the noble product of the very special terroir.

Caves Bailly-Lapierre History

195 million years ago, during the Jurassic period, the slow disintegration of Pangea, the last supercontinent in the history of the Earth, a single land mass before the formation of individual continents, began. Due to the formation of the sea Thetys, France is covered by the sea, some tropical islands are formed. The landscape resembles the Caribbean. An island (Morvan), a coral reef (Mailly-le-Château and Arcy-sur-Cure) and a not very deep lagoon (Saint-Bris), all inhabited by shellfish and ichthyosaurs. Layers of limestone are formed by slow sedimentation. Subsequent erosion leaves the valley of the Yonne with its more or less deep, calcareous soil. It extends from Courson-Le-Carrières to Châtillon-sur-Seine, the Bailly landscape is born.

430 winegrowers supply Bailly Lapierre with the grapes needed to produce Crémant de Bourgogne. Their average annual production is about 25000 hectolitres, which corresponds to about 3.5 million bottles. A fixed stock of 5 million bottles guarantees the constant quality of the Crémants. Their turnover is over 15 million euros and is constantly increasing. One out of every three bottles is exported, mainly to Germany, the United States of America and England.
