In Languedoc, the vines that produce the grapes for this wine grow on soils of limestone and slate. Due to the balancing influence of the nearbyRiver, the grapes ripen more slowly and more aromatic complexity. When the perfect physiological ripeness is assured, the grapes for the Côte des Roses Rosé are harvested exclusively by hand without the help of coarse and less selective machines. After the harvest, the grapes arrive quickly at the winery. Here they are selected and carefully crushed. Fermentation follows in stainless steel tanks at controlled temperatures. After the end of fermentation, the Côte des Roses Rosé can continue to harmonize on the fine lees for a few months....
