Vinification of the Cuvée Rot by Carl Jung
The grapes grow under optimal conditions in the Rheingau. Here, the vines dig their roots deep into soils of loam and loess. After harvesting, the grapes are quickly taken to the press house. Here they are selected and carefully crushed. Subsequently, fermentation takes place in the controlled temperature cellar. At the end, this wine is carefully dealcoholized.
