The history of mulled wine

The history of mulled wine goes back to ancient Rome. Back then, spiced wine was made from warm wine, honey and spices to warm people up during the cold months. While the Romans were the pioneers of mulled wine, the tradition later spread through European monasteries in the Middle Ages. The monks found that mulled wine was a perfect way to warm the body in the cold and preserve wine at the same time. Over the centuries, different countries developed their own variation of mulled wine.

So off we go into the cold season, with a mulled wine, red or white, ready-spiced and ready to heat up. But be careful: Do not heat above 80° C. This is so important, we'll say it again: Do not heat above 80° C! Otherwise the alcohol will escape and the taste will also suffer. The taste of dark red mulled wine traditionally comes from fine red wine, the peel of a ripe orange or lemon, cloves, cinnamon, star anise and sugar. Sweet and fruity, with a hint of cookie. Beyond that, there are no limits to creativity. Vanilla, coriander and mace flowers give the mulled wine that certain freshness kick. Caution: The demand for hot mulled wine is so high that the quality suffers due to the high quantity. Mediocre red wine is mixed with sugar and juice to conceal its poor quality. Vintner mulled wine vs. mulled wine

Mulled wine and conventional mulled wine are both subject to the same guidelines. The difference between mulled wine and vintner's mulled wine lies mainly in the origin of the base wine. If the base wine comes from the winegrower's own vineyards, the winegrower may call the product mulled wine. 

In the case of purchased wine or grape must, indications such as Winzerglühwein, Burg, Domäne, Schloss, Stift, Weinbau, Weingärtner, Winzer and Weingut are not permitted as words or components in accordance with the Wine Ordinance § 38 Para. 1a.

In addition, Winzerglühwein is sweetened exclusively with natural substances, whereas mulled wine from the supermarket often contains sugar.

The basic ingredients

The basic ingredients for mulled wine are wine, spices and often some sweetener. Here are the main ingredients:

  1. Wine: Red or white wine is the basis for mulled wine. Which type is used depends on personal preference. In Germany, for example, red wine is often used, while in Scandinavia and the UK, white wine is often preferred.

  2. Spices: The spices give the mulled wine its characteristic aroma. Commonly used spices include cinnamon sticks, cloves, star anise, ginger and orange peel. These spices are added to the hot wine and give it a spicy, aromatic note.

  3. Sweetener: To make the mulled wine a little sweeter, you can add sugar, honey or fruit juice. The amount of sweetener can vary according to taste.

Different types of mulled wine

There are numerous varieties of mulled wine, which vary from country to country and even from region to region. Here are some of the best known:

  1. German mulled wine: In Germany, mulled wine is an integral part of the Christmas market. It is usually made with red wine, spiced with cinnamon, cloves and orange peel. It is often served with a shot of rum or amaretto.

  2. Scandinavian glögg: Glögg is particularly popular in Sweden and Norway. It usually contains red wine and a mixture of spices such as cardamom and cloves. Almonds and raisins are often added and it is served hot.

  3. British Mulled Wine: In the UK, red wine is often used and spices such as cinnamon and nutmeg are added. It is also common here to add orange juice or apple juice for a fruitier taste.

Tips for preparing mulled wine

There are a few important things to bear in mind when making mulled wine:

  1. Do not use expensive wine: As the wine is heated and spiced, it is not necessary to use an expensive wine. An inexpensive wine will usually do just as well.

  2. Do not boil: Mulled wine should never boil, as this can evaporate the alcohol and affect the flavor. It should only be hot enough to activate the spices.

  3. Allow time to infuse: Leave the mulled wine to infuse for a while after heating so that the aromas can fully develop.

Red mulled wine recipe

A good mulled wine stands and falls with the choice of wine, after all, it provides the basis. A dry Pinot Noir or Dornfelder offers us everything we need. For our mulled wine recipe, we bring the Pinot Noir from the Kilian Hunn winery up to temperature. Caution: never let it boil!

We also need

  • 1 organic orange
  • 4 tablespoons of blossom honey
  • 4 cloves
  • 2 cinnamon sticks
  • 2 star anise
  • 1 vanilla pod

We heat the wine in a pan to around 78° C. The wine should by no means boil - this will cause the alcohol to evaporate and the wine to become bitter.

Now you can add the spices and orange slices to the pan. Remove the pan from the heat and leave to infuse for 1-2 hours.

Then reheat the mulled wine, taste, season if necessary and enjoy.

What is mulled wine?

Why not cook mulled wine?
If a mulled wine is heated above 80° C, the alcohol evaporates, the taste suffers and the sugar degradation product hydroxymethylfurfural is formed, which is said to have harmful attributes. Moreover, mulled wine should not be warmed in copper kettles, as the fruit acid in the wine can dissolve copper. Therefore, heat your mulled wine to a medium heat level, around 70° C, and you'll be on the safe side with no adverse effects on taste.
