The vines here dig their roots deep into soils of clay, sand, clay and marl. The berries for this red wine from France are harvested, at the time of optimal ripeness, exclusively by hand. After the harvest, the grapes are immediately taken to the winery. Here they are sorted and carefully ground. Fermentation follows in stainless steel tanks at controlled temperatures. Vinification is followed by aging on the fine lees for several months before the wine is finally bottled.
