Vinification of Dona Vitória Grande Escolha Rosé by Monte da Ravasqueira

This balanced rosé wine from Portugal is vinified from the grape varieties Aragonez, Syrah and Trincadeira Preta. In Alentejo, the vines that produce the grapes for this wine grow on clay and limestone soils. When perfect physiological ripeness is ensured, the grapes for Dona Vitória Grande Escolha Rosé are harvested particularly quickly and at the coolest possible time of day to preserve their aromas. After harvesting, the grapes are swiftly taken to the press house. There they are sorted and gently crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. Vinification is followed by maturation on the fine lees for several months before the wine is finally bottled.
