Vinification of the Marisco Fernlands Sauvignon Blanc

This wine clearly focuses on one grape variety, Sauvignon Blanc. Only premium grape material was harvested for this wonderfully balanced varietal wine from Marisco. The grapes grow under optimal conditions on New Zealand's South Island. The vines here dig their roots deep into soils of clay and gravel. At the time of optimal ripeness, the grapes for Fernlands Sauvignon Blanc are harvested particularly quickly and at the coolest possible time of day to preserve their aromas. After the hand harvest, the grapes reach the press house as quickly as possible. Here they are sorted and carefully crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. At the end of fermentation, the Fernlands Sauvignon Blanc is allowed to further harmonize on the fine lees for a few months.
