In Alsace, the vines that produce the grapes for this wine grow in soils of sand and sandstone. After manual harvest, the grapes are immediately transferred to the press house. Here, they are sorted and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. The fermentation is followed by several months of aging on fine lees before the wine is finally bottled.
