Vinification of the Le JaJa de Jau Rosé from Château de Jau
The basis for the elegant Le JaJa de Jau Rosé from Roussillon is grapes of the Syrah variety. After being hand-picked, the grapes are quickly brought to the winery. There they are selected and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. After fermentation, the wine is matured for several months on the fine lees before it is finally drawn off.
