After the harvest, the grapes are immediately taken to the press house. There they are selected and gently crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. After it ends, Le Petit Haut Lafitte Blanc can continue to harmonize for several months on the fine lees.
